- Spicy Tuna Melt Recipe
A common hesitation people have is the idea of combining seafood and cheese or serving tuna hot. Done right, a tuna melt is essentially an upgraded grilled cheese: it’s creamy and cheesy with extra protein and plenty of flavor. The spicy version adds bright heat and texture for a sandwich that’s both comforting and exciting.

Ingredient Notes
See the recipe card below for exact quantities and full instructions.
- Tuna – Use good-quality canned tuna packed in oil for richness, and be sure to drain it thoroughly so the filling isn’t watery.
- Mayo – Full-fat mayonnaise adds creaminess and helps bind the tuna salad. You can use your preferred brand or a light mayo if desired.
- Cheese – Mild cheddar melts beautifully and provides a classic flavor. American, Pepper Jack, or Monterey Jack are all good alternatives depending on the heat and taste you want.
- Bread – Choose a sturdy bread so it holds the filling and crisps nicely in the skillet. Sourdough, sturdy white, or artisan sandwich bread all work well.
- Jalapeños – Fresh jalapeños bring a bright spicy note. If you prefer a milder heat, remove some or all of the seeds; pickled or canned jalapeños can be used in a pinch.

Top Tips
- Drain the tuna thoroughly. Press out any excess liquid. Extra moisture will make the filling runny and can sog the bread.
- Butter edge to edge. Spread butter all the way to the bread edges so the entire surface browns evenly for a golden, crunchy crust.
- Avoid overfilling. Too much filling makes flipping the sandwich tricky and the center may stay lukewarm. Use a generous but manageable layer of tuna salad.
- Cook low and slow. Use medium-low heat so the cheese melts fully before the bread gets too dark. High heat can burn the bread before the center is hot.

Storage
Store leftover spicy tuna mixture in an airtight container in the refrigerator for up to 3–4 days. For the best texture, keep the tuna mixture separate from the bread and assemble each sandwich just before cooking.
Make ahead: The spicy tuna salad can be prepared 1–2 days ahead and refrigerated until you’re ready to make sandwiches, making this an excellent option for quick lunches or meal prep.

Spicy Tuna Melt
I recreated this spicy tuna melt after tasting an exceptional one in Laguna Beach. It’s cheesy, creamy, slightly spicy, and perfectly crispy—easy to make at home and ideal for lunch or a quick dinner.
Prep: 15 mins | Cook: 7 mins | Total: 22 mins | Servings: 2
Ingredients
- 2 (5-ounce) cans tuna, well drained
- 1/4 cup mayonnaise
- 1 teaspoon lemon juice (optional)
- 2 tablespoons chives, chopped
- 1/2 jalapeño, diced (keep seeds for more heat)
- 1/4 teaspoon cayenne pepper, or to taste
- Salt and pepper, to taste
- 4 slices sourdough bread
- 4 slices cheddar or Monterey Jack cheese
- Butter, for spreading
Instructions
- In a large bowl, combine the drained tuna, mayonnaise, chives, diced jalapeño, cayenne pepper, and lemon juice if using. Stir until well combined. Season with salt and pepper and set aside.
- Spread butter evenly over one side of each slice of bread.
- Heat a skillet over medium-low heat. Place one slice of bread, buttered-side down, in the skillet. Top with a slice of cheese, a generous layer of the spicy tuna mixture, and another slice of cheese. Finish with the second slice of bread, buttered-side up.
- Cook for 3–4 minutes, or until the bottom is golden and crispy. Carefully flip the sandwich and cook another 2–3 minutes, until both sides are golden and the cheese is melted. Adjust the heat if the bread browns too quickly.
- Remove from the skillet, slice in half if desired, and serve immediately.
Notes
- Drain the tuna well: Removing excess liquid keeps the filling from becoming watery and prevents soggy bread.
- Butter to the edge: Covering the entire slice ensures even browning and a crunchy exterior.
- Moderate the filling: Too much tuna makes flipping and heating more difficult and can leave the center cool.
- Low and steady heat: Cooking on medium-low allows the cheese to melt fully before the bread overbrowns.
